Fried rice is made in many varieties: shrimp fried rice, crab fried rice, garlic fried rice, chicken fried rice, beef fried rice and the list just goes on and on! However in this article, I’ll be sharing my super simple shrimp fried rice, one of my all time favorites!
Ingredients:
- 2 lbs shrimp, shelled and deveined
- 1 head garlic, crushed
- 1 cup yellow onions, finely chopped
- 4 eggs, beaten
- 2 small carrots, grated
- 5 stalks of green onions, finely chopped
- 1/2 tsp pepper
- 1 1/2 tsp kosher salt or any coarse salt
- 1 tsp shrimp bouillon
- 10 cups cooked rice (can be leftovers!)
- Olive oil
Directions:
- In a heated pan, add 3 tbsp oil and cook the eggs in two batches. Cut into strips and set aside.
- In the same pan, add half of the garlic and saute until brown and crispy. Reserve as toppings.
- Add three more tablespoons of oil and add the rest of the garlic. Saute for a few minutes.
- Add the onions and cook until soft.
- Add the shrimp and stir until cooked, for about three minutes.
- Add the eggs, grated carrots, and half of the green onions then stir.
- Add the rice and make sure there are no lumps. Saute for a few minutes.
- Add the black pepper, kosher salt, and shrimp bouillon powder. Stir until combined for about 5 to 10 minutes.
- Turn off the heat and add the spring onions.
- Serve with hot sauce. Yum!😋
Note:
If you can’t find shrimp flavor bouillon, you can use chicken flavor instead.
