This is one of my comfort foods whenever the weather is cold or rainy…Bowl of chili when it’s chilly!
Ingredients:
- 2 lbs ground beef
- 4 cloves garlic, crushed
- 1 large yellow onions, chopped
- 3 Roma tomatoes, chopped
- 2 stalks celery, chopped
- 1/2 cup green bellpepper, chopped
- 1 can red kidney beans or white beans
- 1 cup tomatoe sauce
- 2 tbsp tomatoe paste
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tbsp dried oregano
- 3 tsp cayenne pepper
- 1 tbsp paprika
- 1 tsp pepper
- 1 tbsp salt
- 1 beef bouillon
- 1/2 cup stout beer
- 1 cup water
- 2 bay leaves
- 3 tbsp corn meal
- Chopped onions
- Cheddar cheese, grated
Directions:
- In a heated pot, (preferably cast iron) add 3 tbsp oil.
- Add the garlic and saute until soft.
- Add the meat and saute until brown.
- Add the onions and saute for few minutes.
- Add the tomatoes and celery saute for 3 more minutes.
- Add the green bellpepper and kidney beans and saute for a few minutes.
- Add the tomatoe sauce, tomatoe paste, cumin, coriander, oregano, cayenne pepper, paprika, ground pepper, salt and beef bouillon. Stir and simmer for 15 minutes.
- Add the beer, water and bay leaves. Simmer for 2 hours.
- Sprinkle the corn meal and stir until the sauce is thick.
- Serve with chopped onions and cheese on top with corn bread on the side!😋
