Chili

This is one of my comfort foods whenever the weather is cold or rainy…Bowl of chili when it’s chilly!

Ingredients:

  • 2 lbs ground beef
  • 4 cloves garlic, crushed
  • 1 large yellow onions, chopped
  • 3 Roma tomatoes, chopped
  • 2 stalks celery, chopped
  • 1/2 cup green bellpepper, chopped
  • 1 can red kidney beans or white beans
  • 1 cup tomatoe sauce
  • 2 tbsp tomatoe paste
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1 tbsp dried oregano
  • 3 tsp cayenne pepper
  • 1 tbsp paprika
  • 1 tsp pepper
  • 1 tbsp salt
  • 1 beef bouillon
  • 1/2 cup stout beer
  • 1 cup water
  • 2 bay leaves
  • 3 tbsp corn meal
  • Chopped onions
  • Cheddar cheese, grated

Directions:

  1. In a heated pot, (preferably cast iron) add 3 tbsp oil.
  2. Add the garlic and saute until soft.
  3. Add the meat and saute until brown.
  4. Add the onions and saute for few minutes.
  5. Add the tomatoes and celery saute for 3 more minutes.
  6. Add the green bellpepper and kidney beans and saute for a few minutes.
  7. Add the tomatoe sauce, tomatoe paste, cumin, coriander, oregano, cayenne pepper, paprika, ground pepper, salt and beef bouillon. Stir and simmer for 15 minutes.
  8. Add the beer, water and bay leaves. Simmer for 2 hours.
  9. Sprinkle the corn meal and stir until the sauce is thick.
  10. Serve with chopped onions and cheese on top with corn bread on the side!😋
