This is light, crispy and melt in your mouth goodness!
Ingredients:
- 1 cup flour
- 1/2 cup rice flour
- 1 tbsp cornstarch
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 eggyolk
- Club soda
Directions:
- Prepare the shrimp by removing the shell.
- Make a slit in the back of the shrimp and remove the veins. Wash the shrimp.
- Make several slit on the belly part of the shrimp making sure not cutting all the way through.
- Crack the veins by pressing the shrimp against the counter.
- Dry well with paper towels.
For the batter:
- In a bowl, mix all the dry ingredients.
- Add the yolk and soda. Mix well until no more lumps. You should have the consistency of a pancake batter.
- Dip each shrimp to the batter and deep fry for 3 minutes. When putting the shrimp in the fryer do it slowly. And swirl it back and forth gently while lowering it(refer to the picture).
- Place in a platter lined with paper towel.
- Serve with dipping sauce. Enjoy!
For the mirin sauce:
- In a bowl, add soy sauce, mirin, and sugar.
- Mix well.
- Serve with shrimp tempura.
