Beet Salad

Beets drizzled with balsamic vinegar and extra virgin olive oil. Easy to make and delicious!

Ingredients:

  • 2 medium sized red beets, washed
  • 1 medium sized yellow beets, washed
  • Balsamic vinegar
  • Extra virgin olive oil
  • Salt and pepper

Directions:

  1. Boil the red beets and yellow beets separately until tender. Allow to cool.
  2. Peel and slice thinly.
  3. Arrange in a platter and drizzle with balsamic olive oil dressing.
  4. Sprinkle with freshly ground black pepper and sea salt.
  5. That’s it! Enjoy as a side dish or just by itself.
