Raspberry and White Chocolate Mousse

When you need a quick fix dessert, this is your go to. It’s rich and creamy, its delicious!

Ingredients:

  • 1/4 cup water
  • 2 tsp gelatin
  • 1 cup raspberries
  • 1 cup strawberries
  • 1/ 3 cup sugar
  • 2 cups heavy whipping cream
  • 2 oz white chocolate
  • 1/4 cup sugar

Directions:

  1. In a small pot, combine water and gelatin. Set aside and let gelatin bloom, 4 to 5 minutes.
  2. In a saucepan over medium heat, combine 1/3 cup of sugar, raspberries, and strawberries. Stir until the sugar has dissolved and mixture has thickened, about 10 minutes. Puree the mixture in a blender or use a handheld blender.
  3. Whisk in the gelatin. Transfer into a bowl and allow to cool.
  4. Place the white chocolate over simmering water. Stir until the chocolate is completely melted.
  5. Whip the heavy cream and 1/4 cup of sugar until stiff peaks form.
  6. Add half of the mixture to the berry mixture and mix until combined.
  7. Add the white chocolate to the remaining half of the whipped cream. Mix well to combine.
  8. Divide evenly between 3 glasses.
  9. Chill for at least two hours and sprinkle some cocoa powder on it if you like.
  10. Serve and enjoy!
