Sinigang na Salmon with Vegetables

Ingredients:

  • 1 lb fillet salmon or salmon belly, cut into bite-sized pieces
  • 5 cups of water or rice water
  • 2 tomatoes, quartered
  • 1 small Red onion, quartered
  • 2 inch ginger, sliced
  • 4 taro root, peeled and cut
  • 1/2 lb okra
  • 1 small piece Korean radish or red radish, cut into quarters
  • 1 banana pepper
  • Spinach leaves, washed
  • 3 tbsp butter
  • Knorr sinigang mix

Directions:

  • In a pot, heat the oil and saute the onion , ginger, and tomatoes.
  • Add the water, radish, taro root, and okra. Bring to a boil and simmer until tender.
  • Add the salmon, banana pepper and 1 tbsp of sinigang mix (or more if you prefer)
  • Simmer for 10 minutes and add the spinach leaves.
  • Add the butter and stir.
  • Serve with steam rice and fish sauce.
  • Enjoy!

Sinigang mix is available on Asian store.
