Just like tapsilog, sinigang has many varieties! Different recipes may use salmon, pork ribs, beef neck, and sometimes shrimp! No matter which it is, they all make this good dish taste great. If you like sour soups or are willing to try one, this recipe won’t disappoint!
Ingredients:
- 2 lbs salmon (tails or belly)
- 1 medium yellow onions, quartered
- 3 roma tomatoes, quartered
- 2 inches ginger, sliced thinly
- 3 cups rice water (hugas bigas)
- 1 banana pepper
- 1 tbsp fish sauce
- 1 packet tamarind mix (sinigang mix)
- 1 bunch spinach
Directions:
- In a heated pot, add 3 tbsp olive oil.
- Add the onions and tomatoes and saute for couple of minutes.
- Add the ginger and saute for few more minutes.
- Add the rice water and banana pepper. Bring to a boil and simmer for 15-20 minutes.
- Add about a tablespoon of sinigang mix, add more if you want it to be more sour. Stir and bring to a boil.
- Add the fish and simmer for about 10 minutes or until the fish is cooked through. Do not overcook the fish.
- Add the spinach and simmer for about 3 minutes.
- Serve warm with steamed rice. Enjoy!
