Sopas is a Filipino soup that is traditionally made with elbow macaroni, milk, vegetables, and sausage. This recipe is slightly different from the traditional one in that I actually used some leftover spaghetti instead of macaroni. I guess the lesson here is, if you’re ever stuck trying to figure out what do with leftover pasta, make some sopas with this recipe!
Ingredients:
- 1 pc chicken breast
- 3 tbsp olive oil
- 1 medium-sized yellow onion, finely chopped
- 5 pcs sausage, cut into small cubes
- 2 pcs carrots, cut into small cubes
- 2 stalks celery, chopped
- 2 pcs russet potatoes, cut into small cubes
- 5 cups water
- 1 tsp chicken bouillon
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 head of cabbage, finely chopped
- 4 cups cooked pasta, cut into 1 inch long
- 2 cups milk
- 2 eggs
Directions:
- In a pot, add 5 cups of water and chicken. Bring to a boil and simmer for 30 minutes. Remove the cooked chicken and cut into small chunks. Reserve the liquid.
- In another pot, saute the onion in 3 tbsp oil until translucent.
- Add the sausage and carrots and saute for another 5 minutes.
- Add the celery, potatoes, chicken bouillon, salt, pepper, thyme, and parsley.
- Add the chicken broth, chicken and cabbage
- Simmer for half an hour.
- Add the cooked pasta and milk. Bring to a boil and add the two eggs and whisk gently with a fork until the eggs is mixed in with the soup. Turn off the heat.
- Serve while warm. Enjoy!
Note:
You can substitute the cooked pasta with elbow macaroni. Just cook the macaroni pasta according to package direction and proceed with the recipe.
