Sopas

Sopas is a Filipino soup that is traditionally made with elbow macaroni, milk, vegetables, and sausage. This recipe is slightly different from the traditional one in that I actually used some leftover spaghetti instead of macaroni. I guess the lesson here is, if you’re ever stuck trying to figure out what do with leftover pasta, make some sopas with this recipe!

Ingredients:

  • 1 pc chicken breast
  • 3 tbsp olive oil
  • 1 medium-sized yellow onion, finely chopped
  • 5 pcs sausage, cut into small cubes
  • 2 pcs carrots, cut into small cubes
  • 2 stalks celery, chopped
  • 2 pcs russet potatoes, cut into small cubes
  • 5 cups water
  • 1 tsp chicken bouillon
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 head of cabbage, finely chopped
  • 4 cups cooked pasta, cut into 1 inch long
  • 2 cups milk
  • 2 eggs

Directions:

  • In a pot, add 5 cups of water and chicken. Bring to a boil and simmer for 30 minutes. Remove the cooked chicken and cut into small chunks. Reserve the liquid.
  • In another pot, saute the onion in 3 tbsp oil until translucent.
  • Add the sausage and carrots and saute for another 5 minutes.
  • Add the celery, potatoes, chicken bouillon, salt, pepper, thyme, and parsley.
  • Add the chicken broth, chicken and cabbage
  • Simmer for half an hour.
  • Add the cooked pasta and milk. Bring to a boil and add the two eggs and whisk gently with a fork until the eggs is mixed in with the soup. Turn off the heat.
  • Serve while warm. Enjoy!
Cut the pasta with scissors about an inch long.
Bring the soup to a boil and add in the egg.
Whisk the eggs with a fork.

Note:

You can substitute the cooked pasta with elbow macaroni. Just cook the macaroni pasta according to package direction and proceed with the recipe.
