Many of the most popular dishes in the Philippines are heavy, and that’s where this dip comes in! It goes great with fried dumplings, egg rolls, fried fish, barbecue, crispy pata or even chicharrones. The best part is that the longer you let it sit, the more it ages and develops its taste!
Ingredients:
- 3 cups coconut vinegar (see photo below for what I use!)
- 1/4 cup brown sugar
- 1 tbsp ginger, grated
- 1/4 cup red onion, grated
- 5 cloves garlic, grated
- 1 tbsp salt
- 1/2 tsp ground black pepper
- 10 birds eye chilis, ground
- 3 tbsp coco rum or mirin
Directions:
- Mix everything together.
- Transfer into a clean jar.
- Let it marinate overnight to develop flavor. The longer you wait, the better it’ll taste!
- Serve with a dish of your choice.
