Tomato Egg Salad

As a kid, my mom would always make this as a side dish whenever she made fried fish or meat. It’s simple, delicious and very easy to make!

Ingredients:

  • 6 roma tomatoes, finely chopped
  • 1 small-sized red onions, finely chopped
  • 1/2 cilantro, chopped
  • 4 hard boiled eggs, peeled and chopped
  • Salt and pepper

Directions:

  1. In a bowl, add all the ingredients together.
  2. Toss gently until well combined.
  3. Season with salt and pepper according to your preference.
  4. Serve with fried fish or pork chops and warm steamed rice.
  5. Enjoy!
