Sweet Mashed Potatoes

These sweet mash potatoes are creamy, sweet and just delicious! You can serve this with pork chops, or use it as a pie filling for sweet potato pie or sweet potato tart. I enjoy eating this as it is topped with candied pecans or some ginger snaps!😋

Ingredients:

  • 3 lbs sweet potatoes, peeled and chopped
  • 1/4 cup water
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/3 cup sugar
  • 3 tbsp butter
  • 1 cup heavy whipping cream

Directions:

  1. In a pot, add 1/4 cup of water. Add the chopped sweet potatoes, salt, and cinnamon.
  2. Bring to a boil and simmer until the sweet potatoes are tender.
  3. Add the sugar and butter. Stir and simmer for a few minutes.
  4. Using a handheld mixer, puree the sweet potatoes until smooth.
  5. Add the heavy cream. Stir. Turn off the heat.
  6. Serve with some heavy cream, and top with crushed ginger snap or candied pecan. Yum!

Note:

If handheld blender is not available, you can use a blender or a food processor.
