These sweet mash potatoes are creamy, sweet and just delicious! You can serve this with pork chops, or use it as a pie filling for sweet potato pie or sweet potato tart. I enjoy eating this as it is topped with candied pecans or some ginger snaps!😋
Ingredients:
- 3 lbs sweet potatoes, peeled and chopped
- 1/4 cup water
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/3 cup sugar
- 3 tbsp butter
- 1 cup heavy whipping cream
Directions:
- In a pot, add 1/4 cup of water. Add the chopped sweet potatoes, salt, and cinnamon.
- Bring to a boil and simmer until the sweet potatoes are tender.
- Add the sugar and butter. Stir and simmer for a few minutes.
- Using a handheld mixer, puree the sweet potatoes until smooth.
- Add the heavy cream. Stir. Turn off the heat.
- Serve with some heavy cream, and top with crushed ginger snap or candied pecan. Yum!
Note:
If handheld blender is not available, you can use a blender or a food processor.
