My friend Sara makes the best taquitos! They’re very similar to egg rolls, but they are rolled with both ends opened and usually don’t have vegetables inside. Most taquito recipes use chicken, shredded meat or ground meat.
Ingredients:
- 1 lb ground beef
- 3 cloves garlic, grated
- 1 small yellow onion, finely chopped
- 2 tsp cumin
- 2 tsp coriander
- 2 tsp paprika
- 1 tsp salt
- 1 tsp chicken bouillon
- 1/2 tsp ground black pepper
- 2 cups cheddar cheese, finely shredded
- Melted cheese
- Red salsa
- Avocado sauce
- Cotija or feta cheese (optional)
Directions:
- In a heated saute pan, add oil and saute the garlic and onion until its soft.
- Add the ground beef and saute for 10 to 15 minutes.
- Add the cumin, coriander, paprika, chicken bouillon, salt and pepper. Saute for a few more minutes.
- Simmer for 30 minutes.
- Transfer to a plate. Set aside and allow to cool.
- Add the grated cheese and mix until combined.
- Place the tortilla in a panini pan to make it soft and pliable when rolling.
- Add about two tablespoon of the ground beef on tortilla and roll it like a cigarette. Secure with a toothpick. Do this until you finished the meat.
- The other method (if not using a toothpick) is by frying the taquitos while holding them with tongs (refer to picture below).
- Fry the taquitos until golden brown on all sides.
- Transfer onto a plate. Drizzle with melted cheese, red salsa (recipe available in my site), avocado sauce and some cotija or feta cheese on top. Enjoy!
