

Ingredients:
- 2 1/2 lbs pork shoulder
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 tbsp salt
- 1 tsp pepper
- 2 heads of garlic
- 1 star anise
- 1/3 cup pineapple juice
- Bay leaves
- 3 tbsp anisado wine (optional)
Directions:
- Slice the pork about half an inch thick.
- In a small bowl, add the brown sugar, white sugar, salt and pepper. Mix well.
- Sprinkle this dry mixture onto the sliced pork.
- Add garlic and mix with the pork until combined.
- Add the star anise, pineapple juice, bay leaves and anisado wine.
- Marinate in the fridge for 48 hours.
- In a heated pan, add 3 tbsp oil and 1/4 cup of oil.
- Add half of the marinated pork.
- Cover and simmer for 20 minutes. Stir after 10 minutes to make sure it doesn’t stick!
- Once it starts to caramelize, flip the meat over and simmer for another 5 minutes on low heat.
- Serve with warm rice, sunny side up eggs, and spiced vinegar. Yum! 😋😋😋
