Tosilog

This is the last recipe of my “silog” breakfast series!Tapsilog, longsilog, and now, tosilog. This is made of sliced pork , (also known as tosino or tocino) marinated mainly in sugar and salt. Make your next breakfast a Filipino breakfast!

Ingredients:

  • 2 1/2 lbs pork shoulder
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 tbsp salt
  • 1 tsp pepper
  • 2 heads of garlic
  • 1 star anise
  • 1/3 cup pineapple juice
  • Bay leaves
  • 3 tbsp anisado wine (optional)

Directions:

  1. Slice the pork about half an inch thick.
  2. In a small bowl, add the brown sugar, white sugar, salt and pepper. Mix well.
  3. Sprinkle this dry mixture onto the sliced pork.
  4. Add garlic and mix with the pork until combined.
  5. Add the star anise, pineapple juice, bay leaves and anisado wine.
  6. Marinate in the fridge for 48 hours.
  7. In a heated pan, add 3 tbsp oil and 1/4 cup of oil.
  8. Add half of the marinated pork.
  9. Cover and simmer for 20 minutes. Stir after 10 minutes to make sure it doesn’t stick!
  10. Once it starts to caramelize, flip the meat over and simmer for another 5 minutes on low heat.
  11. Serve with warm rice, sunny side up eggs, and spiced vinegar. Yum! 😋😋😋
