Ukoy (Fritters)

Ukoy (fritters) is a popular street food in the Philippines. Crispy on the outside and juicy on the inside! You can use pork or shrimp for the filling. Don’t forget the spicy vinegar dip that pairs well with this dish! Recipe on my site, too.

Ingredients:

  • 1/2 lb bean sprouts, washed and drain
  • 1 small sized sweet potato, peeled and chopped thinly
  • 1 small sized carrot, peeled and chopped thinly
  • 1 cup sliced jicama or chestnuts
  • 1/2 lb shrimp, shelled and deveined
  • 4 spring onions, finely chopped
  • 1 cup flour

Directions:

  1. In a bowl, add the sprouts, sweet potato, carrots, jicama, and shrimp. Mix well until combined.
  2. In a separate bowl, add the flour, baking powder, salt, pepper and water. Mix well until combined.
  3. Mix the wet ingredients with the dry ingredients. Continue until all the vegetables are covered.
  4. Heat about 2 tablespoons of oil in a preheated nonstick pan.
  5. Portion about half a cup of the mixture and fry until golden brown, for about 5 minutes on each side.
  6. Serve with your favorite spicy vinegar.
  7. Serve while warm. Yum!
