Zucchini and Carrots Salad

This vibrant salad is a perfect accompaniment for fried chicken, steak or any other similar dish that needs a lively kick. The sweet tanginess of this salad makes it a perfect ending to clean your palate!

Ingredients:

  • 2 yellow zucchini
  • 2 green zucchini
  • 2 medium size carrots
  • 1 cucumber
  • 3 tbsp apple cider vinegar or champagne vinegar
  • 1/2 tsp salt
  • 1/4 tsp ground peppercorn
  • 1 tbsp sugar
  • 1 1/2 tbsp honey

Directions:

  1. Wash and peel the zucchini, carrots, and cucumber.
  2. In a small bowl, mix the apple cider vinegar, salt, peppercorn, sugar, and honey. Mix well to combine.
  3. Slice or cut the carrots into fine ribbons. You can use a mandolin or a peeler for this. Do this with all the vegetables.
  4. Transfer the vegetables in a bowl.
  5. Add the dressing and toss well until combined.
  6. Great as a side dish for barbecue, fried chicken or any dish that needs lively color!

Note:

This salad will stay crisp when served fresh! However, please note that after several hours, it may begin to get soggy because of the vinegar dressing! You can also add other vegetables like radishes, beets or even bellpeppers!
