These aren’t like American muffins, as they’re more dense and crummy, like pound cake. In the Philippines we call these cheese cupcakes, although they don’t have icing on top. Hey, I didn’t name it! Thanks to my friend Marciano for giving me this recipe. This is so yummy!
Ingredients:
- 1 cup (2 stick) butter, room temperature
- 1/3 cup sugar
- 2 cans condensed milk
- 4 eggs
- 1 tsp vanilla
- 2 3/4 cups cake flour, sifted
- 2 tsp baking powder
- 1/4 tsp salt
- 2 cups sharp cheddar cheese, finely grated
Directions:
- Preheat oven to 350 F.
- In a bowl, sift the flour, salt and baking powder together.
- Cream the butter and sugar until light and fluffy, about 5 minutes..
- Add the vanilla and mix until combined.
- Add the eggs one at a time mixing well after each addition, about 30 seconds each time.
- Add the dry ingredients alternately with the condensed milk. Don’t overmix or the cake will be tough.
- Add the cheese and fold gently.
- Fill the muffin liner 3/4 full.
- Add the grated cheese on top.
- Bake for 20 to 25 minutes.
