Pancit Bihon

When we first moved here to Texas, the Filipino food was one of the first things we missed! We did live close to an Asian grocery store, so making the foods we missed was not as hard as I expected! However, pancit was one of the dishes that actually took me a few years to get right. My mother advised me and pointed out the type of noodles used greatly affects the dish and determines whether it’s soggy or just right! Thanks Mom!

Ingredients:

  • 1 pkg Super Q rice noodles (16oz)
  • 5 cloves garlic, minced
  • 1 medium sized yellow onion, finely chopped
  • 1 lb shrimp, shelled and deveined
  • 1 lb pork, chopoed
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 pcs carrots, peeled and cut into strips
  • 2 stalks celery, thinly sliced
  • 1/2 a head of small-sized cabbage, cut into strips
  • bunch of cilantro, chopped
  • 5 cups water
  • 1/4 cup soy sauce
  • 1 tbsp fish sauce
  • 1 cube chicken bouillon
  • 1/4 cup olive oil

Directions:

  • Place the noodles in a bowl filled with water. Make sure that the noodles is totally submerge in water. Leave the noodles for 10 to 15 minutes or until it’s soft.
  • In a heated pan, (You need a wok for this or a large skillet). Add 3 tbsp of vegetable oil. Add the garlic and half of the chopped onions (you will use the other half for the noodles). Stir and cook until soft.
  • Add the pork and saute for about 5 minutes.
  • Add the shrimp and seasoned with salt and pepper. Transfer into a bowl.
  • In the same pan, add all the carrots, celery, cabbage and cilantro.. Cook for a couple of minutes. Transfer to a bowl with the cooked pork.
  • Add the remaining oil in the pan and saute the remaining onion until translucent.
  • Add the soy sauce, fish sauce, water, chicken bouillon, and pepper. Bring to a boil.
  • Add the noodles carefully to the pan stirring constantly until the noodles absorbs all the liquid. Add more water if needed.
  • Add the vegetable-meat mixture and cook everything together. This will only take a few minutes since everything is already cooked. If you over mix it, the vegetable will get soggy.
  • Serve with lemon wedges or calamansi.
  • Enjoy!

Note:

I use Super Q brand rice noodles because it stays firm even if you overcooked it. It’s available on any Asian store or check your local grocery store in the Asian section. When boiling the broth for the noodles make sure you taste it to make sure it is seasoned right.
