Pancit Palabok

The toppings on this Filipino dish are what makes it so good; pork crackling, shrimp, boiled eggs, and toasted garlic. This dish does fill you up pretty quick!

Ingredients:

  • 1 pkg pancit palabok noodles (I use super Q brand)
  • 1/4 cup olive oil
  • 1 head garlic, peeled and crushed
  • 1 medium yellow onion, finely chopped
  • 1 lb pork shoulder, cut into strips
  • 1 tsp pepper
  • 3 tbsp olive oil
  • Bunch of green onions, finely chopped
  • 2 lbs shrimp, shelled and deveined
  • 5 cups of water
  • 1 bag of pork cracklings, crushed ( Use your food processor for this)
  • Boiled egg, cut in half
  • Calamansi or lemon, cut into wedges

Directions:

  • Cook the noodles according to package directions.
  • In a pot, add olive oil and saute garlic until light or golden brown. Remove the garlic and set aside. You will use this for the toppings.
  • In the same pan, add the shrimp and cook for about 5 minutes. Transfer into a bowl and set aside.
  • Add two tablespoon of oil and fry the pork until golden brown.
  • Add the chopped onions and cook until translucent. Transfer into a dish and set aside.
  • Mix together the Palabok mix and one cup of water. Stir until there is no more lump.
  • Add the rest of the water. Bring to a boil and simmer for about 15 minutes.
  • Dissolve the cornstarch in 1/4 cup water. Add this to the pan while stirring continuously. Once it’s thick bring the shrimp, pork and onions back to the pan. Stir to combine.
  • To assemble, mix together the cooked noodles, the sauce, and half of the crushed pork cracklings. Transfer into a dish where you will serve it.
  • Add all the toppings, pork cracklings, crunchy garlic, boiled egg, chopped green onions and calamansi or lemon wedges.
  • Enjoy!

Note:

When making the crispy garlic, be sure to cook it just until its light brown in color. If turns dark brown it will be bitter.
