Beets drizzled with balsamic vinegar and extra virgin olive oil. Easy to make and delicious!
Ingredients:
- 2 medium sized red beets, washed
- 1 medium sized yellow beets, washed
- Balsamic vinegar
- Extra virgin olive oil
- Salt and pepper
Directions:
- Boil the red beets and yellow beets separately until tender. Allow to cool.
- Peel and slice thinly.
- Arrange in a platter and drizzle with balsamic olive oil dressing.
- Sprinkle with freshly ground black pepper and sea salt.
- That’s it! Enjoy as a side dish or just by itself.
