Bicol Express is a Filipino dish made with pork, coconut cream and lots of chili (labuyo). A very tasty, flavorful dish!

Ingredients:
- 2 lbs pork shoulder, sliced thinly
- 4 tbsp coconut oil
- 1 head of garlic, peeled and crushed
- 1 medium sized yellow onion, finely chopped
- 1 tbsp ginger, sliced thinly
- 2 tbsp cooked shrimp paste (I use Barrio Fiesta), or fish sauce
- 1-16 oz can of coconut cream
- 1/4 cup water
- Birds eye chilis, 6 to 10 pieces
- 2 hatch chili peppers, roasted (optional)
- Handful of cilantro, chopped
- 2 pcs green onion
Directions:
- In a pan, heat 4 tablespoons of coconut oil.
- Add the garlic and cook until soft.
- Add the chopped onion and continue stirring for a few more minutes.
- Add the pork and ginger. Saute until the pork is no longer pink.
- Add the shrimp paste and continue to stir for a few minutes.
- Add the water, half of the coconut milk, roasted pepper, and birds eye chili.
- Bring to a boil, cover and simmer for 30 to 40 minutes until the meat is tender.
- Pour in the rest of the coconut milk and simmer for another 5 minutes.
- Garnish with chopped green onion and some fresh birds eye chili pepper on top. Serve with warm steamed rice.
