Chicken adobo is THE most popular Filipino dish! This dish as well as lumpia and pancit are the three most popular dishes in the Philippines. With only 6 ingredients, you can make a very delicious and flavorful chicken dish! To make things even better, serve the chicken hot with warm rice.
Ingredients:
- 2 lbs chicken breast and legs, cut into bite sized pieces
- 1 head garlic, crushed
- 1 tsp whole black peppercorn
- 7 bay leaves
- 1/4 soy sauce
- 1/4 cup coconut vinegar
- 1/4 cup water
- Olive oil
Directions:
- In a heated pot, add 3 tbsp olive oil. Saute garlic, pepper, and bay leaves for 2 to 3 minutes.
- Add the chicken and saute for another 3 minutes.
- Add the soy sauce and vinegar. Let it simmer until the chicken is tender (about 20 to 30 minutes).
- Remove the chicken and transfer into a dish. Set aside.
- Continue simmering the sauce until only about half remains.
- Add the chicken back to the pot.
- Stir and simmer for another 5 minutes.
- Serve with warm rice. Enjoy!
