This recipe is from my good friend Tess! She is known for her amazing leche flan. Whenever we have a party, everyone is expecting only one dish from her! It’s so rich and addictive that even if she’s been bringing it over and over, you just can’t have enough!
Ingredients:
- 12 egg yolks
- 1 condensed milk
- 1 evaporated milk
- 2 tsp vanilla extract
- 1 cup water
- 1 cup sugar
Directions:
- In a bowl, mix together the egg yolk, condensed milk and evaporated milk. Stir until there are no more lumps.
- Strain the custard to remove the bits of yolk. Set aside.
- Place about 1/4 cup sugar and 3 tablespoon water on your baking mold (lanera).
- Place the mold on top of the stove and caramelize the sugar (refer to picture below). Allow to cool.
- Pour the custard gently on top of the caramelized sugar.
- Place the custard on a baking pan.
- Add boiling water to the pan (bain marie).
- Bake for an hour at 350 degrees. Allow to cool.
- Place the cooled custard in the fridge overnight.
- Unmold and place in a dish. Enjoy!
