Leche Flan

This recipe is from my good friend Tess! She is known for her amazing leche flan. Whenever we have a party, everyone is expecting only one dish from her! It’s so rich and addictive that even if she’s been bringing it over and over, you just can’t have enough!

Ingredients:

  • 12 egg yolks
  • 1 condensed milk
  • 1 evaporated milk
  • 2 tsp vanilla extract
  • 1 cup water
  • 1 cup sugar

Directions:

  1. In a bowl, mix together the egg yolk, condensed milk and evaporated milk. Stir until there are no more lumps.
  2. Strain the custard to remove the bits of yolk. Set aside.
  3. Place about 1/4 cup sugar and 3 tablespoon water on your baking mold (lanera).
  4. Place the mold on top of the stove and caramelize the sugar (refer to picture below). Allow to cool.
  5. Pour the custard gently on top of the caramelized sugar.
  6. Place the custard on a baking pan.
  7. Add boiling water to the pan (bain marie).
  8. Bake for an hour at 350 degrees. Allow to cool.
  9. Place the cooled custard in the fridge overnight.
  10. Unmold and place in a dish. Enjoy!
