Orange Cranberry Muffins

Ingredients:

  • 2 cups flour, sifted
  • 1 1/2 cups sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup oil
  • 1 cup buttermilk
  • 1/2 cup orange juice
  • 3/4 tsp orange extract
  • 2 eggs
  • 1 1/2 cups canned Mandarin oranges (drain the juice)
  • 3/4 cup cranberries, soaked in rum or warm water

Directions:

  1. In a bowl, sift the flour, sugar, baking powder and salt together.
  2. In another bowl, mix the oil, buttermilk, orange juice, orange extract and eggs together.
  3. Combine the wet ingredients and dry together, making sure you don’t overmix!
  4. Scoop about one third full on a cupcake liner.
  5. Bake at 375° for 20 to 30 minutes or until a toothpick inserted is dry.
