Ingredients:
- 2 cups flour, sifted
- 1 1/2 cups sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup oil
- 1 cup buttermilk
- 1/2 cup orange juice
- 3/4 tsp orange extract
- 2 eggs
- 1 1/2 cups canned Mandarin oranges (drain the juice)
- 3/4 cup cranberries, soaked in rum or warm water
Directions:
- In a bowl, sift the flour, sugar, baking powder and salt together.
- In another bowl, mix the oil, buttermilk, orange juice, orange extract and eggs together.
- Combine the wet ingredients and dry together, making sure you don’t overmix!
- Scoop about one third full on a cupcake liner.
- Bake at 375° for 20 to 30 minutes or until a toothpick inserted is dry.
