When you need a quick fix dessert, this is your go to. It’s rich and creamy, its delicious!
Ingredients:
- 1/4 cup water
- 2 tsp gelatin
- 1 cup raspberries
- 1 cup strawberries
- 1/ 3 cup sugar
- 2 cups heavy whipping cream
- 2 oz white chocolate
- 1/4 cup sugar
Directions:
- In a small pot, combine water and gelatin. Set aside and let gelatin bloom, 4 to 5 minutes.
- In a saucepan over medium heat, combine 1/3 cup of sugar, raspberries, and strawberries. Stir until the sugar has dissolved and mixture has thickened, about 10 minutes. Puree the mixture in a blender or use a handheld blender.
- Whisk in the gelatin. Transfer into a bowl and allow to cool.
- Place the white chocolate over simmering water. Stir until the chocolate is completely melted.
- Whip the heavy cream and 1/4 cup of sugar until stiff peaks form.
- Add half of the mixture to the berry mixture and mix until combined.
- Add the white chocolate to the remaining half of the whipped cream. Mix well to combine.
- Divide evenly between 3 glasses.
- Chill for at least two hours and sprinkle some cocoa powder on it if you like.
- Serve and enjoy!
