Suman is a Filipino snack usually wrapped in banana leaves. There are a lot of varieties of suman, but this one is my favorite. The recipe itself is super easy but making it is a challenge. My husband was complaining about grating the fresh cassava and preparing the banana leaves, it’s a lot of work but its worth it! I was surprised, even my kids love it!
Ingredients:
- 6 cups grated cassava
- 1 cup grated coconut
- 1 /2 cup dark brown sugar or coconut sugar
- 3/4 cup granulated sugar
- 3/4 cup coconut milk
Directions:
- In a big bowl, add the grated cassava.
- Squeeze some of the juice. Press it gently, as you’ll want some of the juice from the cassava, so it’s not dry when cooked. Discard the rest of the juice.
- Add the grated coconut, sugar and coconut milk. Mix well.
- Prepare the banana leaves by washing and running them over a fire, to soften them and prevent breaking when folded. Do this until you finish all the banana leaves.
- Trim the side of the banana leaves where the thick end is. Then cut the leaves to about 10×10 inch squares.
- Place about two tablespoons of cassava mixture. Fold the banana leaves until the edges reach the end.
- Fold both ends to secure.
- Place in a steamer and steam on medium-high heat. Cook the cassava for about 45 minutes.
- Serve while warm. Enjoy!
