Tamarindo

Tamarindo is a Filipino dish made of tamarind paste, glutinuous flour and coconut milk. It has the consistency of pudding and the texture of porridge. Its tangy, sticky and gooey!

Ingredients:

  • 1 cup glutinuous flour
  • 2 oz tamarind paste
  • 1 cup granulated sugar
  • 3 cans (14 oz) coconut cream

Directions:

  1. Brown the flour in a pan. Transfer to a plate and set aside.
  2. In the same pan, add the tamarind and sugar. Mix until combined.
  3. Add the coconut milk and stir until the mixture is has smooth consistency.
  4. Add the toasted glutinuous flour and stir until well combined.
  5. Continue cooking while stirring until it’s thick and has a smooth consistency.
  6. Simmer for about 15 minutes on low heat, stirring once in a while to make sure it doesn’t stick to the pan.
  7. Serve while warm, but it’s good when cold too! Enjoy!
