Tamarindo is a Filipino dish made of tamarind paste, glutinuous flour and coconut milk. It has the consistency of pudding and the texture of porridge. Its tangy, sticky and gooey!
Ingredients:
- 1 cup glutinuous flour
- 2 oz tamarind paste
- 1 cup granulated sugar
- 3 cans (14 oz) coconut cream
Directions:
- Brown the flour in a pan. Transfer to a plate and set aside.
- In the same pan, add the tamarind and sugar. Mix until combined.
- Add the coconut milk and stir until the mixture is has smooth consistency.
- Add the toasted glutinuous flour and stir until well combined.
- Continue cooking while stirring until it’s thick and has a smooth consistency.
- Simmer for about 15 minutes on low heat, stirring once in a while to make sure it doesn’t stick to the pan.
- Serve while warm, but it’s good when cold too! Enjoy!
